Sesame Chicken Salad

The most delicious chicken salad that is great in a wrap, on a salad, or on its own!

Ingredients

  • 1 rotisserie chicken shredded or chopped- 2-3 cups
  • 1/4 cup cilantro leaves chopped
  • 3 scallions chopped
  • 1 tbsp sesame seeds
  • 1/2 cup apple cider vinegar
  • 1/2 cup neutral oil (I use avocado oil)
  • 1/4 cup sesame oil
  • 1/2 cup honey
  • 2 tbsp soy sauce
  • 1/2 cup chow mein noodles optional

Instructions

  • Shred or chop rotisserie chicken into small pieces, place into mixing bowl.
  • Chop cilantro and green onions, add to the chicken.
  • In a separate bowl or shakable jar, mix vinegar, neutral oil, sesame oil, honey, and soy sauce until thoroughly combined.
  • Once mixed, pour roughly half of dressing over chicken mixture and toss to coat.
  • Serve chicken salad in a wrap, sandwich, over greens, or on its town. Add more dressing as desired.
