Sesame Chicken Salad
The most delicious chicken salad that is great in a wrap, on a salad, or on its own!

- 1 rotisserie chicken shredded or chopped- 2-3 cups
- 1/4 cup cilantro leaves chopped
- 3 scallions chopped
- 1 tbsp sesame seeds
- 1/2 cup apple cider vinegar
- 1/2 cup neutral oil (I use avocado oil)
- 1/4 cup sesame oil
- 1/2 cup honey
- 2 tbsp soy sauce
- 1/2 cup chow mein noodles optional
Shred or chop rotisserie chicken into small pieces, place into mixing bowl.
Chop cilantro and green onions, add to the chicken.
In a separate bowl or shakable jar, mix vinegar, neutral oil, sesame oil, honey, and soy sauce until thoroughly combined.
Once mixed, pour roughly half of dressing over chicken mixture and toss to coat.
Serve chicken salad in a wrap, sandwich, over greens, or on its town. Add more dressing as desired.
