I absolutely LOVE meal prepping food that gets better as it sits, and this is definitely one of those meals. The most time consuming part of this recipe is shredding the rotisserie chicken. If you are looking to save time, grocery stores often offer pre-shredded rotisserie chicken, so it is quite literally just mixing and assembling the salad- HUGE time saver!
Versatile and customizable
I love the fact that this can be made your own in so many different ways. If you do not like cilantro or don’t want to go out to buy it, it is still SO delicious without it. Instead of chow mein noodles for crunch, you can add chopped peanuts or slivered almonds. It can also be enjoyed many different ways, including in a wrap, on a salad, in a sandwich, or simply on its own! Don’t forget to drizzle with extra dressing for added flavor!
Sesame Chicken Salad
Ingredients
- 1 rotisserie chicken shredded or chopped- 2-3 cups
- 1/4 cup cilantro leaves chopped
- 3 scallions chopped
- 1 tbsp sesame seeds
- 1/2 cup apple cider vinegar
- 1/2 cup neutral oil (I use avocado oil)
- 1/4 cup sesame oil
- 1/2 cup honey
- 2 tbsp soy sauce
- 1/2 cup chow mein noodles optional
Instructions
- Shred or chop rotisserie chicken into small pieces, place into mixing bowl.
- Chop cilantro and green onions, add to the chicken.
- In a separate bowl or shakable jar, mix vinegar, neutral oil, sesame oil, honey, and soy sauce until thoroughly combined.
- Once mixed, pour roughly half of dressing over chicken mixture and toss to coat.
- Serve chicken salad in a wrap, sandwich, over greens, or on its town. Add more dressing as desired.
